COMMIS CHEF

Reporting to: Head Chef/Sous Chef

Purpose of role: To assist in the preparation of attractive high quality food, in an efficient and professionally run kitchen. To cook dishes and carry out tasks as directed by senior chefs, whilst working in a hygienic manner – in line with Company guidelines. You must ensure that all equipment, machinery, utensils etc. are operated in a safe, professional way, to the highest standard at all times, and that you have received the relevant training for you to be operating such equipment.

Personal Requirements: You will need to be motivated, punctual and organised, with good communication skills and a clear understanding of what your position requires. You will need to be focused and have the ability to work as part of a team. You will be expected to be well presented at all times, with the correct protective clothing/chefs uniform.

Working Practices:

  • Work in a safe manner complying with Palé Hall Company Standards, Health & Safety, Food Policy etc.
  • Work in a safe manner complying with legal requirements.
  • Ensure your work area is clean and tidy at all times – and thoroughly cleaned down after service, as per Palé Hall standards.
  • Follow instructions with regard to correct working practices for each task carried out, to ensure risks to you and others are minimised.
  • Comply with legal requirements regarding fire precautions, first aid and reporting of accidents etc.
  • Work in a professional and mature manner at all times.
  • Carry out tasks as requested by senior chefs.
  • Maintain a positive and flexible attitude to your working environment.
  • Work in accordance with house rules.

The job will also include all other reasonable duties as may be required from time to time.

Performance Standards:

  • No adverse reports from management/senior staff.
  • Good quality, well presented food produced.
  • Portion control/stock levels adhered to.
  • Company requirements met at all times.
  • Legal requirements met at all times.
  • Working area kept clean and tidy.
  • Good personal presentation.

NIGHT PORTER

Purpose of role: To ensure the smooth running of the reception department overnight and deliver customer satisfaction.

Personal Requirements: You will need to be self-motivated and well organised, with good communication and management skills, and a clear understanding of what the business and your General Manager expects. You will be expected to lead by example, be on shift at peak times and have a positive, willing and flexible attitude, taking full accountability for the hotel overnight and work to the highest levels to ensure that the Palé Hall standard is maintained at all times.

HOUSE KEEPER

Purpose of role: To service both guest hotel bedrooms and public rooms within the hotel ensuring a high level of attention to detail wit special consideration to respecting guest privacy at all times.

Personal Requirements: You will need to be motivated, punctual and organised, with good communication skills and a clear understanding of what your position requires. You will need to be focused and have the ability to work as part of a team. You will be expected to be well presented at all times, wearing the correct protective clothing when required.

Working Practices:

  • Work in a safe manner complying with company standards, Health & Safety policy and company SOPs.
  • Work in a safe manner complying with legal requirements.
  • Follow instructions with regard to correct working practices for each task carried out, to ensure risks to you and others are minimised.
  • Comply with legal requirements regarding fire precautions, first aid and reporting of accidents etc.
  • Work in a professional and mature manner at all times.
  • Carry out housekeeping tasks as requested by the Head Housekeeper/Deputy Housekeeper.
  • Maintain a positive and flexible attitude to your working environment.
  • Work in accordance with house rules outlined in the staff handbook.

The job will also include all other reasonable duties as may be required from time to time.

Performance Standards:

  • To have a full and up to date knowledge of hotel products and services.
  • To handle guest and visitor enquiries or requests, providing the correct assistance or information that meets the customer’s needs.
  • Communicate any customer comments promptly and professionally to management in accordance with policy so that appropriate action can be taken.
  • To carefully handle any guest property that has been left in the bedrooms ensuring that it is recorded in the hotel lost property log according to company policy.
  • Ensure all guest bedrooms and public rooms are vacuumed and cleaned to the required standards and that any rubbish is disposed of carefully and safely.
  • Ensure that all dirty linen is processed in the correct manner.
  • Report any maintenance issues to the Head/Deputy Housekeeper or to Reception to be logged with Maintenance.
  • Ensure any hotel keys in use by you are signed out and back in at the beginning and end of each shift.
  • Good personal presentation and grooming standards according to the staff handbook.
  • To attend any training sessions held for your department, Health & Safety, Fire and other departmental training that may be required.
  • This list is a guideline only and you may need to carry out any additional duties that may be required occasionally by the Head Housekeeper.
