We plan a few special evenings over the next few months. The most important one is on October 18th. An evening of food and wine hosted by our own head Chef Gareth and our Sommelier Garry (further details here…). The last one we did was a sell-out and a great success. The menu with matching wine flight is stunning. Tickets are selling fast. We are offering a very special accommodation deal in honour of this event. For the evening on the 18th we are offering 20% off our full rack rate on B&B, only applicable if you come to Gareth’s evening. For those who want to stay an extra night we are also offering Saturday 19th at 20% discount for DBB; this special rate is available only if you attend and stay for Gareth’s evening. It’s been a busy summer and it must be said that the team both old and new have really pulled together. Each department have had their own challenges, largely due to not having quite enough staff. It’s not for the want of trying; we have vacancies in housekeeping, kitchen and restaurant waiting staff. As you know, we prefer to employ local people and personality is more important than experience, as training can be given. When we opened, we gave our word that we would always employ locals where we could. If you think you might like to learn new skills or advance existing ones then come and do a work trial with us. As I mentioned in the last blog post, we went to Stockholm to see Harry, our senior sous Chef. He has been on Stage at a 3 Michelin Star restaurant. He gave us the very good news that he intends to come back and will no doubt use his experience to share with our team. He will be back mid-September. Gareth and the team have done a outstanding job covering Harry’s absence, and Alan and I thank them from the bottom of our hearts for all they have done.
Alan and I are off on holiday to France for a couple of weeks on Sunday. We leave with our minds at peace, secure in the knowledge that we have a team who can do very well without us.
One final thing, on this Sunday 1st September Palé will have been open for three years. If you are here for Sunday lunch, full afternoon tea or dinner on Sunday there will be a glass of champagne waiting for you, from us, to celebrate this special day.
