Firstly, we would like to say congratulations to Catrin. Cat was awarded Student of the Year by Coleg Cambria for work-based hospitality learning. Cat now wants to use this as a springboard to study hospitality management. It’s really hard to study while you are working so this is an amazing achievement, especially as she has been promoted to Head Receptionist during this time, which has brought with it increased work and responsibility.
We are also very excited for Harry, our senior Sous Chef, who has been offered a Stage (work experience) in the 3 Michelin-star Frantzen in Stockholm. This is a huge honour in the chef world. Many apply to go there, few are accepted. Harry leaves us on 10th July for two months. We dearly hope he will return to us, but we haven’t made him promise to, as this could open a whole new world to him. We have put a persuasive thought on the table to encourage his return to the mother ship. Good luck Harry! You will be much missed and we won’t apply pressure for you to return … not more than once a day anyway. Alan and I hope to pop out to see you over the summer.
We have been very fortunate to appoint Lee who will start in two weeks as our new Sous Chef. He will work with Gareth to cover for Harry and, on Harry’s return, will strengthen the senior team in the kitchen. We are lucky that this has worked out so well. Quality Chefs are hard to find, but Lee cooked for us yesterday and – in an unfamiliar kitchen – produced a meal we would be proud to put on our menu.
Adam is taking part in the UK and Ireland Junior Chocolate Masters Championship this weekend. After his success with his chocolate show-pieces on Bake Off The Professionals he has been training hard. This is the last year he counts as a junior, next year he becomes a senior and, while he has set his future sights on this, he knows more training and work will be needed to step to the next level. All of us at Palé are incredibly proud of our pastry team. Adam and Sam are certainly helping put Palé on the map. Sam appeared on BBC’s See Hear programme this week. He is considered an outstanding role model for deaf people following their dream and working in a fully hearing environment.
As I mentioned a few weeks ago, a couple of key staff have moved on to pastures new and, while they will be missed, it has given us the chance to re-structure and strengthen the team by creating some new posts. We have been very fortunate to appoint some outstanding senior staff who will support Debbie in the day to day running of Palé. Gavin will join the team as Deputy Manager in about a month, he has a wealth of experience in small five star hotels. Gethin and Melody join us as Front of House and Operations managers, Nick as junior Front of House manager and Kate as Senior Receptionist. Keeping it in the family, Samantha Cleal has joined in the new Sales and Marketing role. All them come from the right background of high service levels and bring a range of experience from different sectors of the hospitality sector. Together with our new starters in housekeeping, kitchen and restaurant, the Palé team has burgeoned; we welcome them one and all to the Palé family.
