AA 3 rosettes award recognises the outstanding achievement of Head Chef Gareth and his team.

It’s been a big week.

On Monday we went to the AA Awards evening to be presented with our Three Rosette Award. We are proud, very proud, of Gareth and his team.

The citation reads:
3 Rosettes: Outstanding restaurants that achieve standards that demand recognition well beyond their local area. The cooking is underpinned by the selection and sympathetic treatment of the highest quality ingredients. Timing, seasoning and the judgment of flavour combinations will be consistently excellent. These virtues tend to be supported by other elements, such as intuitive service and a well-chosen wine list.

Two years ago, today, we bought Palé Hall. We knew what we were planning was enormous, we knew what the renovation would involve, we knew moving to a new area would be personally difficult and we knew that two rookies opening a hotel was going to be challenging. Actually, we had no idea!! Those of you who have followed the blog over the last two years will realise the truth of that statement. Do we regret it? Not at all. Would we do it over again with the benefit of foresight? Almost certainly. Will we do it again somewhere else? Definitely not 🙂

Again, our heartfelt thanks to everyone involved from Michael Caines to Williams Homes, from Pim to Gareth, from every member of staff past and present to all our suppliers and, lastly but equally importantly, to everyone locally who have made us feel so very welcome.

Four weeks ago we celebrated our first birthday. My darling dad wanted to do something to mark the occasion. We just love what he came up with, something beautiful, deceptively simple and something all our hotel guests will appreciate as well as being as local as it is possible to be. Yesterday he went into Bala to pick up our new key fobs. Twenty individually full size turned wooden pears made by Les from Pren in Bala. Thank you Les and a very special thank you to dad.
