The Chef's Table

Hosted by Luke Selby, guests take a seat at the heart of the kitchen and watch the evening unfold in real time. Dishes take shape, decisions are made and the rhythm of service becomes something you are part of rather than waiting for. There is space for questions, conversation and the kind of genuine exchange that a dining room rarely allows. By the end of the evening, the kitchen feels less like a hidden place and more like somewhere you belong.

The same spirit of openness extends to the bar. Our cocktail masterclasses are hands-on and relaxed, guiding guests through the craft of building balanced drinks with real confidence and enjoyment. From understanding spirits and flavour to the techniques that quietly elevate a cocktail, these sessions are as sociable as they are informative. Perfect for private groups, celebrations or simply an evening with something a little different at its heart.

Penderyn Whisky Experience

Among our most considered collaborations is the guided whisky fine dining experience with Penderyn Distillery, one of Wales' most celebrated producers. Together, we take guests through carefully selected expressions, exploring production, maturation and flavour in the warmth of the Palé Hall setting. It is an evening rooted in Welsh craft and genuine appreciation, an exploration of provenance and character that sits entirely naturally within the values of the estate.
