Named after the Victorian industrialist who built Palé Hall in 1871, the Henry Robertson Dining Room brings together the heritage of the house and the cooking of Luke Selby and his team.
At its heart are Luke’s menus, evolving with the seasons and showcasing exceptional produce from Wales and across the British Isles. Classical technique and meticulous sourcing are complemented by subtle Japanese and Filipino influences, creating food that is precise, elegant and deeply connected to provenance.
The dining room provides a fitting backdrop: ornate ceilings, original period details and views across the estate create a sense of occasion without formality. A contemporary expression of fine dining within one of Wales’ great country houses driven by seasonality, creativity and craft.
