Pale_Hall_Gatherings_That_Extend_the_Experience

There is no repeat sitting, no second chance at the same menu. The only way to experience it is to be in the room.

There are chefs who cook food. And then there are chefs who make you remember exactly where you were sitting, what was in the glass, and how the first bite felt. Luke Selby is the latter. If you have dined at Palé Hall before, you will already know what his kitchen is capable of. The Chef's Table on 24th July is where he goes further.

Luke hosts the evening in The Hearth - the original Victorian kitchen at the very centre of the house. Ten seats, one team, one menu. Six courses built around the estate and the producers Luke has spent years working alongside, each paired by the sommelier team, in a room unlike anywhere else you will dine this year.

Every menu Luke creates for the Chef's Table is built from scratch around what the season is offering at that precise moment. Dishes he has been developing quietly in the weeks beforehand, hyper-seasonal produce, food that has never been served before and will not be served again. To sit at The Hearth is to catch Luke's cooking at a specific point in time - there is no second sitting, no repeat of the same menu.

The best evenings at Palé Hall have a habit of turning into something longer. If the night calls for it, a room on the estate means no reason to rush - breakfast the following morning, the grounds to yourself, and the kind of slow start that a dinner with Luke deserves.
